Born in Perthshire, Graeme Pallister is our Executive Chef.
Graeme trained at Kinloch House Hotel in the mid 90s and has since worked at Longueville Manor Jersey, The Angel in Sussex, at Restaurant Andrew Fairlie Gleneagles, and Perth's Lets Eat where he was head chef for 2 years. Although still involved in the Parklands Hotel, Graeme's focus since 2007 has been on developing 63 Tay Street as his signature restaurant using the guidelines of LOCAL - HONEST - SIMPLE.
In 2006 and 2007 Graeme was Highly Commended at the Scottish Chef Awards, for both City Chef of the Year and Scottish Hotel Chef of the Year. In early 2008 Graeme Pallister was selected to become a Masterchef of Great Britain and in 2010 won Executive Chef of the Year at the Scottish Hotel Awards. Graeme was crowned Chef of the Year at the Catering in Scotland Awards 2013
Graeme’s mantra is Local, Honest, Simple and he launched a personal blog of the same name in 2012 as a platform to share recipes and views on a wide range of topics from ingredients to hospitality.
On a day to day basis the kitchen is looked after by our head chef Mark Glancey who has worked in may of Perthshire's well know restaurants before teaming up with Graeme over the last 7 years. Mark brings his own passion to the business to help develop menus and new ideas for the restaurant.
