Graeme Pallister at Chef of the Year

Born in Perthshire, Graeme Pallister is our Executive Chef.

Graeme trained at Kinloch House Hotel in the mid 90s and has since worked at Longueville Manor Jersey, The Angel in Sussex, at Restaurant Andrew Fairlie Gleneagles, and Perth's Lets Eat where he was head chef for 2 years. Although still involved in the Parklands Hotel, Graeme's focus since 2007 has been on developing 63 Tay Street as his signature restaurant using the guidelines of LOCAL - HONEST - SIMPLE.

In 2006 and 2007 Graeme was Highly Commended at the Scottish Chef Awards, for both City Chef of the Year and Scottish Hotel Chef of the Year. In early 2008 Graeme Pallister was selected to become a Masterchef of Great Britain and in 2010 won Executive Chef of the Year at the Scottish Hotel Awards. Graeme was crowned Chef of the Year at the Catering in Scotland Awards 2013

On a day to day basis the kitchen is looked after by our head chef Stuart Black. Born in Aberfeldy, Stuart after working in other Perthshire restaurants, first joined the Parklands in 2012, before departing on learning journey in 2014 that eventually to him to work at the Elderflower restuarant in Lymington, where alongside Andrew du Bourg the chef/proprietor they gained 3 Rosettes. Stuart has returned to Scotland and taken up the role of Head Chef at the Parklands since April 2018. Stuart has embarked on the challenge of moving dining at Parklands to a new level with his own culinary style at the forefront.
